I’m Vicki. I am a registered dietitian nutritionist who will empower you to make nourishing your body a daily practice and a delicious adventure.

My Story + Approach

I fell in love with how food works in the body in middle school when I presented a science project on the digestive system. I became fascinated by the nourishing power of food. As the youngest of three girls in my family, I struggled with food and body weight issues. Swinging between deprivation and excessive eating was part of my internal battle. I found peace with food when I realized that healthful eating is about balance and making mindful choices every day.  By ditching dieting and understanding body acceptance and love, I came to my personal discovery of what foods make me feel good.  I want to help you feel the same way, every day!

My philosophy

Nourishing your body well is a daily practice – a lifestyle shift. It’s not a quick fix. By evolving your eating to a healthier place the focus is about progress, not perfection. It’s about balancing your eating experiences and making mindful food choices to fuel your body well, especially in mid-life. Ultimately, my goal is to empower you to eat nourishing foods and make choices to foster health and happiness for life.

Fun Facts 

I am a podcast junkie. I love to listen to all sorts of podcasts on mindfulness, neuroscience, healthy aging, cooking and culture.

I worked at Walt Disney World and took classes at Disney Univeristy for a summer in college. (I received both a Mouseterate and Ducktorate degree!)

I lived in Europe (Brussels and London) for almost 6 months in my mid-twenties with my best friend; we had odd jobs and traveled via high speed rail from country to country.  

I am an avid water skier and enjoy spending time on our boat at our lake house in Michigan.

Education & Experience

Vicki is a nationally recognized lifestyle nutrition expert, culinary and media consultant and writer.  She is the author of two books, The Essential Guide to Healthy Healing Foods and Total Body Diet for Dummies®.

Her expertise, recipes and writings have appeared in dozens of national publications, including SHAPE, Prevention, Martha Stewart Living, The Costco Connection, EatingWell, Delicious Living, Chicago Health, CookingLight.com and Taste of Home. She is interviewed on WGN-TV’s Medical Watch, CBS and ABC7 Chicago.

Vicki has a degree in Communications from the Park School of Communications at Ithaca College, as well as a degree in Food and Nutrition from Loyola University at Chicago.

She is an active member of the Academy of Nutrition and Dietetics having served on many boards and working groups, including as Chair of the Nutrition Entrepreneurs Dietetics Practice Group.

Vicki lives to eat well with her husband and two active teens in Chicago, IL.
