I’ve got to confess, I married a smoothie man.  Scott, my hubby, loves smoothies perhaps more than I do!  He’ll get out our Vitamix and start throwing fruits, veggies, nuts and seeds in with reckless abandon (he wishes he could toss bacon in, but the line has to be drawn somewhere :).  Smoothies are a quick and simple way to get colorful, nutrient-rich goodies into your day.

Today, I am going to add exotic flavors: dried figs, mango and ginger to my wild blueberry smoothie for flavor that pops in your mouth and takes you to the Caribbean with crystal blue water and luxurious sandy beaches.  This smoothie is a day at the beach in a glass!  I just returned from the island of St. John. This photo takes me back and hopefully puts you in an exotic smoothie mood!

Some other smoothie combinations that would well with wild blueberries are:

  • Mexican cinnamon + dark chocolate 
  • Peanut butter + banana
  • Toasted coconut + plain Greek yogurt + curry powder
  • Baby kale + almonds 
  • Whey protein powder + almond milk + honey

Let’s get blending.  Get creative.  Toss whatever flavors sound good to you.  Enjoy every slurp, sip and gulp.  It’s a party in a glass!

Wild-Blue-Smoothie-.jpg
Makes 1 smoothie

Ingredients 
1 cup wild blueberries, frozen
1/2 cup mango, peeled and sliced
3 dried figs
1 heaping Tablespoon plain Greek yogurt
1/2 cup unsweetened almond milk
1 teaspoon ginger, gently peeled and shaved (with a microplane)

Directions
Toss all ingredients in a blender or Vitamix.  Pulse until combined and thickened.  Pour into a glass. Sip and enjoy!
