Although, I am not a gadget gal, I am acquiring kitchen appliances.  I have Vitamix blender and a Cuisinart food processor and my latest acquisition for Christmas was a Smart Chef Air Fryer.  I am having fun with it. . .

To go along with this month’s Recipe Redux theme: Favorite Kitchen Tool, I am using my new kid on the block: my air fryer.

Today, I am going to take sweet potato fries to a new level with my air fryer.  It’s super simple to just chop, toss with herbs, spices and maybe a spritz of oil and off they go into the air fryer.  In minutes you’ve got tasty sweet potato fries with virtually no fat and a whole host of super nourishing qualities.

While you can use white potatoes for this recipe, I am choosing sweet potatoes for their color and unique nutritional benefits.  (However, white potatoes have a lot of nutritional benefits, too! 😉

For this recipe, just spritz a bit of vegetable oil on the chopped sweet potatoes and sprinkle with garlic powder and a dash of salt and black pepper.   Feel free to add other spices like my faves: smoked paprika, curry powder or just plain old turmeric – not only are they anti-inflammatory, but they are tasty!

The trick with cooking in an air fryer is checking it and tossing them regularly as they cook.  I have a good RD pal, Stacey, who said to me about air fryer cooking, “It’s all trial and error.”   I agree.  I made two batches of these as the first batch burned.  (Ugh, oh, well.)

Serves 2 (1 cup each)

Ingredients

1 large sweet potato, washed, peeled and chopped into strips

2 – 3 spritzes vegetable spray

1 heaping Tablespoon garlic powder

1/2 teaspoon sea salt

Dash of black pepper

Directions

In a medium bowl, put in the potatoes, spritz with oil, and sprinkle in garlic powder, salt and pepper.  Gently toss together until potatoes are well coated.   Pour into the basket of the air fryer.  Cook on 350 degrees for 10 minutes, check and toss and put in for another 10 minutes.  Repeat until potatoes are fully cooked.  Serve immediately. (Note: If these fries are not eaten right away they become soggy and cold.)
