It’s grilling season!  Why not pair your grilling faves with greens?

It’s a delight to get a package on your doorstep, especially when it’s an interesting food sample (as a registered dietitian nutritionist that is one of the perks of my job!)  I was thrilled to open this one — packed inside was Organic Girl Green’s two new flavors: Sweet Pea Shoots and Pepper Greens.  I am excited to try them as I am fan of the other flavors. {This is not a paid post.  I just love this product!}

Sweet-Pea-Sprouts.jpgToday, I am using the sweet pea shoots because I was in the mood for tender, delicate greens.  You’d never guess it, but these little sprouts are packed with nutrients.  They have a lot of protein – with 5 grams per serving + vitamin A, C, and K + potassium, folate and magnesium.  This all bodes well for your total body wellness for heart, blood, cells and reproductive health!

I am simply going to toss tomatoes and mozzarella cheese in the pea shoots.  Grill up some pork tenderloin medallions and place on top of the greens.  It’s a meal in a snap!

Serves 4

Ingredients

4 – 4 ounce pork medallions

1/4 cup salt-free seasoning blend, mesquite flavor

1 package Organic Girl Sweet Pea Shoots (or other greens that you like)

2 small Roma tomatoes, sliced

1/2 cup mozzarella cheese, diced

2 Tablespoons extra-virgin olive oil

2 Tablespoons balsamic vinegar

1 dash of salt and pepper

Directions

Pat each of the pork medallions with the seasoning blend.  Grill pork medallions (until internal temperature reached 165 degrees F.)  Set aside.

In a medium bowl, combine pea shoots, tomatoes, mozzarella cheese.  Whisk together olive oil, balsamic vinegar, salt and pepper – and drizzle over the greens mixture. Portion green salad into a plate and top with a pork medallion over each one.
