It’s that egg nog time of year — from Thanksgiving through  New Year’s, my son, Grant, and husband, Scott, look for it in the fridge.  However, it packs a calorie and sugar punch with 120 calories and 20 grams  of sugar per 1/2 cup (it depends on the brand, check the Nutrition Facts on the label)!  So, I am all about lightening it up.  Have you tried AlmondMilk Holiday Nog? {FYI: This post is not sponsored by AlmondMilk}.   I bought it to do a taste test at home and was pleasantly surprised – it has an authentic egg noggy-flavor and get this – it’s only 50 calories and 8 grams of sugar per 1/2 cup.  Plus, it’s a good dairy-free option.  That’s a big number difference when you gulp down a glass of egg nog in one fell swoop and want more (hello, Grant!).

Since the almond-based nog is thinner and not as rich-tasting than traditional egg nog, I am going to kick up the flavor a notch with a touch of peppermint extract, cinnamon and cayenne pepper.  {Feel free to leave out the cayenne, if you don’t prefer the heat.}

Hot and Skinny Spiced Nog

Serves 2

Ingredients

2 cups AlmondMilk Holiday Nog

1/2 teaspoon pure peppermint extract

Pinch of cayenne pepper

2 cinnamon sticks or 1/2 teaspoon ground cinnamon

Directions

Place nog into a small pot over medium heat.  Add peppermint extract, cayenne and cinnamon stick and stir.  Bring to a simmer and remove from heat.  Stir and pour into fancy coffee cups or mugs.  Allow to cool for a minute before serving.

Enjoy eating simply!
