- 1 Tbsp sesame oil
- 3 cloves garlic, minced
- 1 Tbsp fresh ginger, grated
- 3 – 4 scallions, coarsely chopped
- 1 lb lean ground turkey (93% lean)
- 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
- 1/4 cup lemon juice
- 1 Tbsp honey
- 1–2 tsp sriracha (adjust to taste)
- 1 head butter or Bibb lettuce, leaves separated and washed
- Optional toppings: a dollop of sriracha, chopped avocado and/or scallions, shredded carrots, sesame seeds, chopped peanuts
Directions
- Sauté aromatics: Heat sesame oil in a large skillet over medium heat. Add garlic, ginger, and onion. Cook for 2–3 minutes until fragrant.
- Brown the turkey: Add ground turkey and cook until no longer pink, breaking it up as it cooks.
- Add veggies and sauces: Stir in soy sauce, lemon juice, honey, and sriracha. Cook for another 3–4 minutes until everything is heated through and well combined.
- Assemble: Spoon the turkey mixture into individual lettuce leaves and top with your favorite garnishes.
