Happy spring! As the grass turns green, tulips peek out and birds sing outside your window, springtime air blows in opportunities to renew your health and wellness goals. To kick off the month, I’m offering my Top 5 Fitness Tips – along with a delicious shrimp pasta dish that I love to make at home with my family. Just as good, nutritious food fuels your fitness, let’s embrace some ways to put you in the fitness mood for good.
Not only will doing some of the above improve your fitness level, but it will elevate your mood, improve sleep and allow you to think better. It’s a win-win! Now let’s get cooking. Just toss deveined shrimp with tails off and sesame oil, soy sauce, lemon juice, honey, garlic, scallions into cooked angel hair pasta. Serve and enjoy!
SESAME SHRIMP AND BROCCOLI WITH ANGEL HAIR
Preparation Time: 10 minutes
Cook Time: 10 minutes
1 box Dreamfields Angel Hair |
1 pound large shrimp, deveined and cooked |
1 small scallion, minced |
1/4 cup lemon juice or 3/4 of a large lemon, squeezed |
2 tablespoons sesame oil |
2 tablespoons low-sodium soy sauce |
1 teaspoon honey |
1 clove garlic, minced |
1 cup broccoli florets |
2 teaspoons sesame seeds (optional) |
- Cook pasta according to package directions; set aside.
- Meanwhile, place shrimp, scallion, lemon juice, sesame oil, soy sauce, honey and garlic in large sauté pan. Bring to simmer over medium-low to low heat; cook 2 to 3 minutes, until shrimp are heated. Add broccoli; cover and cook 3 to 4 minutes, or until broccoli is crisp-tender.
- Divide pasta evenly among individual bowls. Top with shrimp and broccoli mixture. Sprinkle with sesame seeds, if desired. Serve warm.
Makes 6 servings.
Nutrition information (1/6 of recipe): 330 calories; 22 g protein; 49 g carbohydrates; 6 g total fat; 1 g saturated fat; 125 mg cholesterol; 625 mg sodium; 6 g total dietary fiber
