Put dates and walnuts into food processor. Pulse for a minute.
Add 1/2 cup coconut (reserve the remaining 1/4 cup for coating), vanilla, garam masala and salt. Pulse until coarsely blended.
Using your small cookie scooper, scoop a dollop onto a platter or cookie sheet. Repeat until the mixture is gone. Dip each ball into the remaining coconut to coat.
Place the ball in the refrigerator for an at least an hour.
