Spiced Date Coconut Walnut Bites

Equipment

  • 1 food processor
  • 1 small cookie scooper

Ingredients
  

  • 2 cups dates pitted
  • 1 cup raw walnuts
  • 3/4 cup shredded coconut unsweetened
  • 1 tsp pure vanilla extract
  • 1 tsp garam masala spice blend
  • 1 pinch salt

Instructions
 

  • Put dates and walnuts into food processor. Pulse for a minute.
  • Add 1/2 cup coconut (reserve the remaining 1/4 cup for coating), vanilla, garam masala and salt. Pulse until coarsely blended.
  • Using your small cookie scooper, scoop a dollop onto a platter or cookie sheet. Repeat until the mixture is gone. Dip each ball into the remaining coconut to coat.
  • Place the ball in the refrigerator for an at least an hour.
  • Enjoy a bite as a snack or share them with your family and friends!
